No bake Cheesecake Bites!

Hey guys! Welcome back to yet another blog post! It's finally Friday and no matter how your week has been, you can finally unwind and chill! :D


So for today's post, I am going to be talking about these incredibly delicious and Keto friendly Cheesecake Bites that I whipped up for the Weekend! Once Friday kicks in and you're in the Weekend mood, all you crave for are all kinds of junk food! So I thought of sharing some recipes with you which will help you more than satisfy your cravings along with helping you to stick to Keto starting with these Cheesecake Bites!


This recipe has been inspired by a recipe I saw on the Keto Connect channel. It was so simple and looked so yummy that I just had to make it. And boy, am I glad that I did! Do try this recipe at home guys and believe me, you won't be disappointed!





For making these Cheesecake bites, all you're going to need is:

  • 200 grams of Cream Cheese

  • 50 grams of Butter

  • 4 drops of Vanilla Essence (optional)

  • 4-5 Tbsps of Stevia (as per taste)

  • A pinch of Salt

  • A handful of Chocolate Chips. You can alternatively cut up regular Dark Chocolate pieces and put it in your mixture.

  • 3-4 Tbsps of Almond Flour

For making these Bites:

  • In a bowl take the Cream Cheese and Butter and mix it well. Now if you don't have an electric beater (which I didn't), you can use a Glass Bowl and use the Double broiler method (which I have talked about in my "Love in the time of Keto" blog post). Or you can boil some water in a container and melt the mixture off of the heat from the water. Be careful because the Cream Cheese might burn if you aren't careful with it.


  • Mix them well till the mixture is soft and fluffy.



  • Add in the Stevia, Salt, Vanilla Extract, Chocolate Chips and the Almond Flour and mix the mixture well. Now in the original recipe, the guys at Keto Connect used Almond Flour and so I decided to put it in to see what the taste would be or how it would affect the end result. But honestly, the flour did not do much except to maybe give a little bit of support to the mixture. So in case you don't have the Almond flour, you can totally skip it, because it won't drastically alter or impact the dish in any way.



My final mixture looked something like this:



Ensure that your mixture has a similar glossy finish which means that the Butter and Cream Cheese have mixed well together.


Now depending on how you want to have them, you can scoop out the mixture in to an Ice tray or just freeze the whole mixture as it is. It's really up to you. Freeze it for 30 minutes and then scoop out tiny pieces from the mixture using a spoon or a scoop!



I just put some of the mixture in some Cupcake holders and I scooped out the rest of them into bite sized pieces into a bowl!


These taste absolutely like Cheesecakes and are way cheaper, healthier and you can regulate the sugar level as well, which is always a bonus!
