Love in the time of Keto!

Hey guys! Welcome back to yet another blog post! I hope you're having a wonderful day so far and are totally killin' it!


So it's the Valentine's week and I am sure many of you are scrambling for last minute ideas, gifts and everything! So today I am going to help you guys out and share a recipe for the tastiest and gooey-est (if that's a word!) chocolate fudge/brownie/cake/whatever-you-wanna-call-it to truly make your partner fall head over heels in love with you all over again! :D


So, to make this Chocolate fudge (that's what I would like to call it!), all you need are:


200 gms of Dark Chocolate (you can go for Lindt dark chocolate or Amul bitter chocolate)

100gms of Butter (unsalted)

100gms of Cream or Cream Cheese

Any Artificial Sweetener of your choice! (around 3 tbsps)

A tbsp of Instant Coffee Powder (Nescafe will work just fine)

4 Eggs (yolk and whites separated)

5 tbsps of Unsweetened Cocoa Powder (Hershey's)

A fistful of Almonds

A fistful or more of Chocolate Chips

1 tsp of Vanilla Essence (Optional)


Method:

Take a Cake tin and butter it up real nice. Make sure to cover each and every side of the tin so that the fudge pops out without any difficulty!

Preheat the oven to 150 degrees Celsius.

For melting the Chocolate and Butter, you can either opt for the double boiler method or you can use a microwave.


Double Boiler method:

In case you don't have a microwave oven to melt your chocolate and butter, this traditional method never fails to disappoint. Be very careful of the heat and keep lightly stirring your chocolate so that it doesn't burn.


Once your Chocolate and Butter have completely melted, cool the mixture down for about two minutes and add in the Cream or Cream Cheese. If you're using Cream Cheese, be sure to melt it for about 30 seconds before whipping it into the Chocolate-Butter mixture. Once the Cream has been incorporated into the mixture, add in the Coffee, Vanilla Essence and Sweetener of your choice and quantity!


Take the Whites of four eggs and whisk them until you see "peaks". Your White Egg mixture should look something like this:



Now, add the Egg yolks one by one to the Chocolate-Butter-Cream mixture. Make sure the mixture's cool or else your eggs WILL scramble! (Believe me!) Add your egg whites next and gently "fold in the whites". Be very gentle so that you have a luscious and rich Chocolate batter. Your batter should have a consistency like this:



If your batter turns out a little thick, you can add in some cream to make it better. To top it off, add the crushed Almonds and Chocolate Chip cookies, transfer it in your tin and bake for 30-35 minutes or until the center of the Cake is cooked completely and take it out of the oven!


After taking it out of the oven, do allow the cake to cool down for a little while (atleast half an hour!). Since this cake doesn't contain any flour, it will be quite delicate and might crumble and we certainly don't want that!


And finally when the cake is finally cool and ready, garnish it by sprinkling some Cocoa powder on it and cut it into any shape you want and gift it to your partner! Or friend! Or parents! Or just eat it yourself! It's literally that simple!


Here's how my Fudge turned out:


Pretty good, eh? I was impatient and cut it too soon before the fudge could actually cool down. But it tasted absolutely incredible and I am sure is going to make your Valentine incredibly happy too! ;)
