Keto Poha!

Yes! You read that right! Finally a Poha recipe that is Keto friendly and just as incredible as the actual Poha! :D Thank you @Headbanger's Kitchen for this dish! :D
On Keto, the most staple breakfast for almost all of us is eggs! And while this Cheesy Omelette recipe does taste incredible, it does help to have something else sometimes. One of the dishes I miss the most for my breakfast is Poha obviously. And now, you get to have it again on Keto! Honestly guys I was so stoked when I saw the recipe that I decided to make it the very next day! And needless to say, I absolutely loved it! So without wasting any more time, let's jump right into it!
For making this incredibly yummy Poha, you're going to need:
1 medium Cauliflower (Are we surprised?)
2 tsp of Cumin seeds
2 tsp of Mustard seeds
Salt to taste
1.5 tsps of Turmeric Powder
One small Onion
2 Chilies
A handful of Curry Leaves (Optional)
A handful of Coriander Leaves (Optional)
Half a lemon
A handful of peanuts (Optional)
2 tbsps of Ghee/Olive Oil
Alright, now to make this dish:
Separate out the florets of your Cauliflower and grate them with a grater or a food processor.
Cut the white stems of your Cauliflower into cubes and boil them in salter water for about 8 minutes. These pieces are going to serve as the Potatoes in your Poha! (Genius, right?)
In a kadhai, heat up the Ghee and add the Jeera (Cumin seeds) and Mustard seeds.
Add in the Chopped Onions, Chilies and Curry Leaves.
Saute them for a while but don't brown the onions completely.
Add in the Grated Cauliflower along with the Salt and Turmeric Powder and mix them well.
Let the mixture cook for about 10 minutes and add in the "Potatoes"/cut Cauliflower stems.
Mix in all the ingredients well together and finally squeeze in the lemon.
Garnish it with some Coriander Leaves and sauteed peanuts!
And there you have it! One of the tastiest, healthiest and most Keto-friendly Poha dish is now ready! I had such a blast eating it! And it absolutely does taste like the actual Poha! It's very filing and does keep you fuller for longer as compared to the traditional Poha. This is how my Poha turned out:

I was out of Curry Leaves and Peanuts and so didn't add them! You can also add some tomatoes if you want to.
