Keto Pizza!

Hey guys! Welcome back to yet another blog post! I hope you're having a wonderful day so far and are totally killin' it!


Today I am going to be sharing with you my recipe for a Keto friendly Pizza! This has not only been one of my most favourite recipes to create but also has been the yummiest too! It is a little challenging to make, especially when you're like me and you do not have an oven and hence have to be creative while making dishes that do require one. This is how my Pizza turned out to be:



It honestly is such an awesome dish to make and tastes even better than an actual pizza! So without wasting anymore time, let's get started.


For making the Pizza base, you're going to need:

  • 1 medium sized Cauliflower

  • 3-4 tbsps of grated Parmesan Cheese

  • 1 egg

  • A pinch of Salt

For making the Pizza sauce and the toppings, you're going to need:

  • A tetra packet of ready made Tomato Puree. If you're going to make the Puree at home, a cup of Puree would work.

  • 200 gms of Mushroom

  • 15-20 pieces of Chicken/Lamb Pepporoni

  • Salt and Pepper

  • Dried herbs like Oregano, Basil, Parsley

  • 2 tsps of Truvia/Stevia

  • A handful of Garlic Cloves

  • Fresh Basil Leaves

  • 50-80 grams of Mozzarella Cheese

  • 50 grams of Parmesan Cheese

  • Jalapenos and Olives

Process: To make the base:

  1. Grate the Cauliflower using a food processor or a grater.

  2. Saute the grated Cauliflower in a non-stick pan for about 8 minutes on a medium flame for the Cauliflower to lose it's moisture.

  3. Cool the mixture down. Once the mixture has been cooled down, put the Cauliflower in a clean cloth and squeeze out the remaining water from the mixture. This step is important so that the base is stable and doesn't become too gooey.

  4. Next up add the Egg, Salt and Grated Parmesan Cheese into the Grated Cauliflower and mix all of them well to make a dough like mixture.

  5. Spritz a nice big and round non-stick pan with Olive oil and pat down the mixture in the shape of a Pizza base on the pan. Make sure that the base is neither too thick nor too thin. Once your base has been formed, cover the pan with a lid and cook it for about 30 minutes on a medium flame. Keep checking the pan every ten minutes and flip the base (like a pancake of sorts) to ensure that the base is nice and brown uniformly.

  6. Alternately, if you have an oven, preheat the oven to 190 degrees Celsius and place a parchment paper on your baking tray. Cook the base for about 20 minutes in the Oven and you should be good to go!

To make the Pizza Sauce:

  1. Take some Olive Oil in a pan and put the Chopped Garlic pieces in it.

  2. Add in the Tomato Puree into it along with the dried herbs, sweetener and seasonings.

  3. Stir the mixture occasionally until your sauce thickens and has a nice consistency. It shouldn't be too thick or too thin.



For the Pizza Toppings:


Now this part is where you can go all out and experiment depending on what sort of a pizza YOU want to eat. I had some Chicken Pepperoni and Mushrooms and so decided to use both. I fried up the Pepperonis in a pan in some Olive Oil and prepped and cut my Mushrooms.


To assemble it all together:


Coat the Pizza base with the Sauce and cover it up real nice. Add the Pepperonis and Mushrooms on top of that. Add in the fresh Basil Leaves and some more dried herbs like Oregano and Chili Flakes (if you need to). Cut the Mozzarella Cheese into chunks and spread it evenly on the base. Sprinkle in some grated Parmesan Cheese and cover the non stick pan with a lid for 10 minutes. And voila! Your Keto friendly Chicken Pepperoni and Mushroom Pizza is now ready!




If you're going to be cooking in a non stick pan, then your base might stick to the pan a bit. But don't worry! It's still going to be pretty stable and is going to taste absolutely divine!



And honestly you guys, maybe it doesn't look super filling, but I just had two slices and I was DONE! Usually I need to eat around 6-7 slices to be done and this was honestly so surprising! And it tasted incredible too! Hands down, better than any store brought pizza you will ever get! Trust me on this ;)
