Keto friendly Gajar Ka Halwa!

Hey guys! Welcome back to another blog post! I hope you guys are having a wonderful weekend! :D
So today I am going to be talking about a Keto friendly version of our all time favourite Gajar ka Halwa! Now I know that many of you are going to be all like "But this isn't Keto!", but hear me out.
The two main things that you will be unsure about while making this recipe are Milk and Sugar. Now you can easily replace Sugar with Truvia/Stevia. But what about Milk? I know technically we aren't supposed to be having Milk on a Keto diet. But since this is a dessert recipe, and we are only going to be consuming a minimal portion of the quantity being prepared, the net carbs per serving are really not that much. So every once in a while, when you crave for some Gajar ka Halwa, you can make this awesome and Keto friendly Gajar ka Halwa and have an absolute guilt-free indulgence!

To make this recipe, you're going to need:
750-800 grams of Red Carrots
3-4 tbsps of Stevia/Truvia (will vary depending on how sweet you want it to be)
3 tbsps of Ghee
1-2 tsps of Elaichi powder (Cardamom powder)
1.5 cups of Full Fat Milk (You can also use Almond Milk if you wish!)
Process:
Grate the Carrots using a Food Processor or a Grater.
In a non-stick Kadhai (Vessel), heat up 2 tbsps of Ghee.
Add in the Grated Carrots and mix them well.
Add in the Milk and the Cardamom Powder after 3-4 minutes and cover the mixture with a lid. Stir occasionally.

5. It usually takes around 30-40 minutes for the Milk to reduce. Ensure that the mixture doesn't stick to the bottom of your vessel. Add in the Stevia a little while later and mix it well. Keep cooking the mixture until your consistency is neither too dry nor too milky/watery. Add in a Tbsp of Ghee in the end and mix it well.
Your mixture should look something like this towards the end:

Turn off the heat and garnish your Halwa with some Chopped Almonds!

And honestly guys, it tasted so good! An absolute guilt-free indulgence for those occasional cravings you will have! Keep a check on your portions consumed just like you would on a regular diet. And you're good to go!
