Keto friendly Egg Fried Rice!

Hey guys! Welcome back to yet another blog post! I hope you have had a wonderful week and are having a great weekend so far as well!
So for today's blog post, I decided to share a Keto friendly recipe for the classic Egg Fried Rice! Fried Rice in general for me has always been very comforting and I am so happy that I can eat this absolutely delicious dish even while on Keto!
For making this dish, you're going to need:
2 Eggs
1 medium-sized Cauliflower
2 Tbsps of Olive Oil
1 medium-sized Capsicum
2-3 Tbsps of finely chopped greens of Spring Onions
3-4 cloves of Garlic
1-2 Tsp of Salt, Pepper, Oregano and Chili
For making this dish:
Grate the Cauliflower using a food processor or a grater.
In a Pan, heat up the Olive Oil and add in the Eggs.
Keep mixing the egg mixture until you get nicely cooked Scrambled Eggs.
Add in the grated Cauliflower mixture and cover the pan with a lid for around 10 minutes.
Take off the lid and add in the Sliced Capsicum, greens of the Spring Onions, Garlic.
Season the mixture with some Salt, Pepper, Oregano and Chili Flakes.
Mix the rice well so that all the ingredients are incorporated well.
And there you have it! An absolutely easy to make and delicious Keto-friendly Egg Fried Rice is now ready! I haven't added any sauces to the rice because I wanted to limit the carbs count in the dish. But you can always add a dollop of your favourite sauces like Soya Sauce, Teriyaki Sauce or even Vinegar to add in some flavour!
