Keto Fried Rice with Bacon!

Hey guys! Welcome back to my blog! I hope you're as excited for the weekend as I am and have had a good week so far! If not, well... weekend's here at last!
So the other night I was craving for some good old Fried Rice and I decided to whip up a Keto version of the regular Fried Rice! I added some Bacon as well on top (because why not!) It turned out to be incredibly delicious and no different from the regular Fried Rice. So if you're like me and you crave for Chinese food quite frequently, do try this recipe out! I promise you won't be disappointed! And you can obviously add any source of Protein to your "Fried Rice" like Chicken, Eggs, Prawns, Bacon or even skip them all and just have a regular "Fried Rice" with some veggies of your choice!

So to make this dish, we are going to need:
One medium sized Cauliflower (are we surprised?) - grated
200 grams of Brocolli
One medium sized Capsicum
Peas (Optional)
6-7 strips of Bacon (Take as much or as little as you want. I get fairly small sized Bacon strips so 6-7 is good enough for me.)
Pink Himalayan Salt, Pepper, Oregano, Chili Flakes and Basil (to season)
A splash or more of Soya Sauce, Green Chili Sauce and Ginger-Garlic Sauce (Add as per taste)
To make this dish:
Fry the Bacon first and keep it aside. Use the fat released by the Bacon as the oil for making the dish.
In the same pan, add the Broccoli and saute it for 5 minutes. Add in the Capsicum and Peas and saute it for 3-4 minutes.
Add in the grated Cauliflower and cook on a medium flame for 7-8 minutes or until the Cauliflower has cooked quite well.

After the Cauliflower has cooked completely, add in the seasonings and sauces and mix the mixture well. I didn't want my Rice to be too spicy so I went easy with the sauces. Like I had mentioned before, try to choose sauces which have relatively less carbs in them. Since we do use just a splash or two for a quantity which is roughly about 2-3 servings, our carbs intake won't be affected all that much!

And there you have it folks! Our delicious Keto-friendly Fried Rice with Bacon is now ready! I probably went a little overboard with the veggies, but I just like having my Fried Rice with loads of Veggies and Meat. You can add as little or as much as you want! You can add in a scrambled egg and make it an Egg Fried Rice as well! The World is your oyster! Go nuts! :D
