Keto Chocolate and Peanut Butter Truffles!

Hey Guys! Welcome back to another blog post! I hope you all had a lovely Holi and an extended weekend! :D
So today I am going to be sharing the recipe for some amazing Chocolate and Peanut Butter Truffles that I had made for Holi. They were incredibly delicious and just hit the spot! They are amazingly filling too, which is always a plus! So without wasting any more time, let's jump right into it!
For making these incredible Truffles, you're going to need:
7-8 tbsps of Hershey's Cocoa Powder
5-6 tbsps of Unsweetened Peanut Butter (this will vary depending on how much you want to incorporate the taste of Peanut Butter in your truffles!)
3-4 drops of Vanilla Essence (Optional)
20 Almonds ground into chunky bits
1-2 tsps of Instant Coffee Powder
1 tsp of Salt (YES! Trust me ;))
2 tbsps of White Unsalted Butter
2 tbsps of Coconut Oil (In case you're not a big fan of Coconut oil, you can always add in more butter)
70 gms of Dark Chocolate cut into small pieces
Half a cup of milk (might vary depending on the consistency of your batter)
3-4 tbsps of Stevia/Truvia (will vary depending on how sweet you want the Truffles to be)
Process:
Take a mixing bowl and add in the Cocoa Powder, Unsweetened Peanut Butter and the ground Almonds.
Melt the butter in a pan or in a microwave oven and add it in the batter along with the Coconut Oil.
Add the rest of the ingredients except for the milk.
Now because most of the ingredients are heavy, your batter is going to be quite dense and thick. And while we do not want the batter to be extremely thin and runny, we also do not want the batter to be very dense either. So keep adding splashes of milk into your batter (half a cup should work) and keep mixing it. The consistency of your batter should be thick enough for you to be able to make the Truffles but should also be moist and gooey. This is a closeup of my batter:

Apologies for the crude photography, but I remembered to take the picture of the batter only after I had made quite a few of the Truffles. But yeah, so basically scoop out some of the mixture in your hands and make average-sized Chocolate Balls. Freeze them for an hour. And voila, your Keto friendly Chocolate and Peanut Butter Truffles are ready. Sprinkle some Cocoa Powder on top if you're like me and want to have that extra jazz.

I do love coating my Truffles in a lot of Cocoa Powder so I (probably) went a little overboard as you can see:

You can also coat them with powdered Truvia or Stevia if you so fancy! And honestly, these taste so so good and are the perfect dessert or even snack when you just want something filled with Chocolate but also Peanut Butter AND do not want to cheat on your diet! ;) This batch size makes roughly 12-15 Truffles which is pretty decent and will last for atleast a week when stored in the fridge/freezer!
