Keto Chicken Biryani!

A little bit of a #throwback!


I am a 24 year old Computer Engineer based out of Mumbai, India. Owing to my super hectic and stressful schedule, I had not only been gaining quite a lot of weight, I also had been suffering from quite a few health issues like frequent digestive problems, painful periods and frequent bouts of anxiety and stress. I had heard quite a bit about the fairly new "Keto" diet and decided to give it a go 5 months back. Quite needless to say, it's absolutely changed my life!


Keto recipes and knows how!


Quite honestly, when I started with Keto, it was quite daunting, because there were very few food channels and blogs which had any good Keto recipes. Being an absolute foodie, I did crave for a lot of things which I could no longer eat on Keto, like Biryanis, Pastas, Noodles and desserts.


Thats' when I slowly started #experimenting with cooking different recipes and Voila! I began to not only enjoy Keto more, I also began having fewer #CheatDays!


Today, I am posting one such recipe for you guys, which is my favorite "Chicken Biryani"!


Ingredients:

700g Chicken

2 tbsps Curd (Whole Fat)

1 tbsp Ghee (or any fatty oil of choice)

1 tsp salt

1tsp Red Chilli Powder

1tsp Cumin Powder

1 tsp Turmeric Powder

1 tsp Dhania Powder

1.5 tbsp Ginger Garlic Paste

Couple of mint leaves

2 tsp Biryani Powder (Optional)

2 Medium Cauliflowers


Method:

Marinate the Chicken overnight with all the ingredients mentioned above

The next day, just before making the biryani, grate both the cauliflowers in a food processor till they are finely minced.

Take a large container (kadhai) and put two big spoons of Ghee in it. In case you dont have ghee, you can use any other fatty oil like Olive Oil.

Put a Cinnamon stick, 3 cloves and a bay leaf after the ghee has heated up.

Let them roast for a minute.

Put in the marinated chicken and lay them out in a nice single layer.

Put the grated cauliflower rice on top of the marinated chicken and spread it out in an even layer.

Put a tablespoon and a half of ghee on the rice.

Sprinkle two spoons of Biryani powder on the Cauliflower "rice" as well.

Cover it with a plate and let it cook for about 30 minutes on medium flame.
